I am so sorry for the predicament you find yourself in, it is heart breaking how common this is, so you are not alone....on the positive it sounds like you have found a good trainer that Maple has taken to, but as everyone says building confidence has to be an incredibly slow and gentle process...
Some of the dogs I work with are anxious or fear reactive, by being consistent and using the above mentioned advice, you will help your dog cope better for sure...it just takes time, actually it is an ongoing process but! It is also important to accept the way he is(I'm not saying you don't btw)...
To me someone who has failed or is failing their dog is the person that just lets their dog off lead then walks around on their phone, has zero interaction, zero awareness of what their dog is doing or who's approaching, not even noticing when they poop... actually there are many examples...
