There was a lovely article in the Guardian at the weekend:

Adopting a sweet, skittish rescue dog has taught me how to manage my own fizzing brain | Patrick Lenton

I love the bit where they say that their greyhound doesn't like 'situations' - being near a pigeon, being served food at the wrong time, etc. It sums up how sighthounds really don't do change, and like stability, and that for them, 'situations' could be quite subtle - rearranging the ornaments on the mantelpiece, the tone in your voice when talking to your partner about next year's holiday, when they realise you're thinking about 'going somewhere'... The biannual opening and closing of the roof blinds in the conservatory would always addle Jasper's brain - we never did work out why.

That is a lovely article:) and it does high light the trauma that some greyhounds experience having been bred into the racing life:(
One of my dogs is an ex racer(retired early as she didn't take to it) and she is most definitely spooked mostly by clapping, cheering, loud tannoys, pops, bangs, ice cream vans and of course the random things that we can't see or hear that she just knows are there!! Thankfully she did get retired and has been living a lovely, comfortable life with understanding owners ever since.

Thanks for the alert, JudyN. Have just read the article on line and can easily identify Mabel with some of the traits. On occasions she cries in her sleep - have yet to determine the cause. It’s not something that our previous rescued whippets did. And she regards any change in routine with suspicion - asking her to get into the car on a different side because I’ve parked it awkwardly. However she does like new walks. Will have to re-read the article.
