are there any recommended shoots to spectate for learning how to train gundogs?

I suggest you scout out some gundog trainers - there are plenty about. Some use rather old-fashioned methods so I wouldn't recommend you go to those, but plenty are using more modern training. A look at individual websites or a phone call should ascertain which would suit - run a mile from anyone who uses words like pack, leader, dominance and so on. Avoid sending your dog away for training, as you will need to be trained alongside the dog.
