Tilly is more show than racing and she loves racing and is always stalking and chasing things.
Bean is coursing bred and isnt interested one bit in chasing anything, she just walks by my side all the time, going off now and again to run

Gosh not only does she look like a lady she clearly is one o:) . I can scarely see Esme on walks she moves so fast chasing everything that moves, from leaves and feathers in the wind to wagtail and geese on the river bank. . If I want her to walk by me I have to tell her HEAL and remind her about every 2 steps  .

I don't think prey drive affects underlying temperament at all, I have a keen coursing dog that has the sweetest temperament possible, he is completely trustworthy with my sick/young poultry if I leave him free in the kitchen/garden with them, despite going rabbit hunting regularly.
My Borzois lived in the house and court yard with our cats and pet rabbits, when let out they were happily mingling with my poultry and peacocks, sheep and goats, but they would kill wild rabbits, and any strange cat straying on our property would be chased mercilessly. They knew the difference between our animals and those, which did not belong.

I have also met many racing greyhounds, bred and kept purely for racing in large greyhound facilities. Yet when they retired they made lovely pets, safe with cats and other small animals. Most were also incredibly clean, despite the fact that many were never before in a house. So in MHO the temperament is something that is definitely inherited. And as the racing and show strains of Whippets have not been bred totally separately, there should not be a huge difference in temperament right across the board.
