Had a few similar threads in past but backstory and update.

She has always been a bit awkward when it comes to toilet habits wanting out often, going through phases of every 4-6 weeks having accidents for a few days then fine, wanting out once during night etc.

Back in November I changed her diet, half wet half dry and also changed her to filtered water, this made her drink far less and what seems a normal amount and she stopped wanting out during the night, around end of January she had a few accidents and kept licking her lady parts and took her to local pet hospital who said she had irritation down there, gave her tablets to soothe it and she seemed a little better, then around mid Feb she began having a fever, blocked up then when she did go it was diarhoea and wanted out during night again and started getting cranky biting her lead being vocal and restless, took her to vets the week later and told me she had a bad fever gave me something to settle her stomach and antibotics, and she was fine for around 2 weeks then she began to get bad again, fever again wanting out during night cranky and restless, pulling the lead and took her back to vets around another week later and was told her fever got worse and was given more antibiotics and again I waited at least 2 weeks (to make sure she had time to recover) she was fine overnight and was so for over a week then started slipping back into having a fever again, one night she wanted out 3 times.

Most recent trip to vets they wanted to do a blood test but she was howling and yelping so couldn't do it and didn't have the space or time to sedate her so gave her a different antibiotic via injection and this was a few days ago.

Her fever seems better and shes calmer than she was so hoping thats the end of it though I think with it being reoccuring and her having a history of going a month or so and then having a health issue blood tests would help find out the root.

Also she began seeing a behaviourist, who said the dog clearly feels safe around me and cannot see any issue and from what I told her it sounds like it's a physical thing and maybe she is wanting out during the night and sometimes more during the day due to discomfort which is making her anxious. (and to be clear my dog hasn't wanted out during night for past few days, it's just a habit when she has a fever)

Outside of that the only issues with her is I need to reteach her recall, she got better for a while but then got worse as I stopped doing the training (still have a bad leg from breaking it just over a year ago) and shes now quite vocal when she either sees a cat outside or one of the neighbours dogs (not in an agressive way) or when she thinks someone is coming to door i.e a car or van parks outside which is quite stressful, and she also is still very vocal if someone knocks/rings the door and only when I open the door and show her she calms down.

She is no longer reactive to cars passing UNLESS shes overexcited or overtired i.e coming back from dogsitter, or she sees a large dog as they make her uncomfortable and for that she really doesn't like German Shepherds she barks like crazy though I am now training her, so if she sees another dog passing that isn't a small dog I let her lie down and say good girl until the other dog passes, this means she won't be reactive and even wags her tail.

If she's having repeated fevers I would absolutely be pushing for tests and a diagnosis.

To add to that I think I would be going to see another vet if they know she's been having repeated fevers and issues and didn't see that any urgency in getting a blood test done I'd be slightly worried.

Well it doesn't help I have used 2 different vet's I mostly went to the nearest PSDA which is 15 miles away but as I use public transport the journey is exhausting, like walk around 14 minutes to bus stop that goes near the hospital and it has a level crossing next to it so sometimes I may wait another 10-15 minutes for the barrier to go up, then wait up to 30 minutes for the bus, then 45-60 minutes on bus then walk a steep uphill walk for another 10 minutes.

I have insurance and I used that at a vet in town instead, so they only know her recent history since the start of this year, and before I began using the PDSA which was 2 years ago (and I get her yearly injections at this local one)

At this vet at first visit they checked her urine, her temperature, her stomach and gave me the medicine to help her stomach which did help literally cleared up overnight, saw that same vet about 3 weeks later on 2nd visit, it was just this time I saw a different vet there who looked at her notes.

On the 2nd visit the vet did say if it continues get blood tests done, the 3rd visit the vet did ask if I wanted them but when she tried said my dog was too distressed and they would have to sedate her and they couldn't do it there and then, and gave her that antibiotic injection and said call back in a few days if she hasn't got better.

Aha clarity... Well then I would schedule a time with the vet when they do have time and can get those bloods done.
For her sake you need to find out whats causing her problems.

Food intolerances are not uncommon in BC's, so it could be worth looking at what she's eating and trying something different. Trigger ingredients are often cereals (including rice) and cooked chicken.

Update on this, bloods came back fine but shes gotten worse again out of nowhere, took her on holiday 2 weeks ago and no issues and she stopped chewing the grass in morning, came back and her issues got worse again but I did complicate things a little because I stopped her supplements about a month ago for a few days due to forgetting and when I gave them to her again she had accidents for a few days so stopped.

I started giving them to her again about 10 days again no accidents but her poop is getting sloppier and shes struggling often to go, it's quite dark today and she pooped out what looked like gravy, not red more dark brown and she is pooping more often.

No change to her diet at all, I buy the same 2 brands of wet dog food as I have done for around 6 months and rarely give anything but the dry food I have been giving her for the past year apart from one time when on holiday and I forgot to bring some, and another time got a different brand as I ran out and as I bulk buy couldn't get her usual brand for over a week.

She keeps getting high temps.

I would contact the vet again, have they done a stool sample as well as the blood test? Part of me still wonders if some of her digestive issues are stress related but the consistent high temperatures I would find concerning.

They did ask for them about 6 weeks ago but her stomach got better (not the temperature though) so didn't do them and after the blood tests came back they said test stool now.

Could be some element of anxiety as there's German Shepherds behind my house and they have been barking more and more in past 6 months and she barks when she hears.

I would definitely get back in touch with the vet and get a stool sample to them then, try and give them a whole picture of her(if you haven't already), with regards to possible anxiety too.

Was at vets today, different one than usual who said what we have all mentioned before it could be diet related, they did take the stool samples I saved over past few days for testing too

Since Tuesday her poop has been better, soft but not watery/gravy like.

I give her Asda Hero brand dry food and Aldi/Lidl brand wet food tins.

I know Supermarket brand dry food isn't the best so happy to find out a place to get the better food cheaper.

I put her on Asda brand dry food as this is has been working for her the past year, Aldi brand working dog dry food gave her rock solid poops and blocked glands, Another brand can't remember exactly gave her soft poops and went more often.

Try her on grain free. Aldi have one in sometimes. Asda Hero dry is largely whatever grain was cheapest at the time it was made, wheat and maize are common triggers for food intolerance. The Aldi one isn't too bad, the grain free working dog version that is also less costly because of no VAT on working dog foods. It's also worth getting a better quality dried food as you feed so much less by weight, a bag can last so much longer. Remember rice is also a grain but often better tolerated.
Zooplus is online and offers a good variety of dried and wet foods with usually quick delivery - as quick as next day without paying extra. Rocco is a good canned one. If you buy dry food in large sacks it works out better, 12 or 15kg at a time. I normally get Lupo 24/10 but there was a discount on Lukullus last time I ordered, so got that for a change. Both cold pressed grain free foods. Skinners and Arden Grange are also pretty good and not too expensive, go for the working dog ones where you can to save 20% VAT.
My first dog was a BC cross and just like yours in the poo department. I switched her to grain free and she was cured literally overnight. This was over 20 years ago and there was much less choice back then, but I've fed grain free ever since. Food intolerances are common in border collies, German Shepherds and some other breeds.
