6 large potatoes, peeled and diced into 1-inch squares

2 free-range eggs

2 large handfuls fresh spinach, trimmed and washed

1 onion, finely chopped

1 carrot, halved and finely chopped

Extra-virgin olive oil

Directions

Preheat the oven to 450 degrees F.

Put the potatoes into salted boiling water and bring back to a boil for 2 minutes. Carefully add the eggs to the pan and cook for a further 8 minutes until hard boiled, by which time the potatoes should also be cooked. At the same time, steam the spinach in a colander above the pan. This will only take a minute. When the spinach is done, remove from the colander and gently squeeze any excess moisture away. Then drain the potatoes in the colander. Remove the eggs, cool under cold water, then peel and quarter them. Set aside.

In a separate pan slowly fry the onion and carrot in a little olive oil for about 5 minutes, then add the heavy cream, and bring just to a boil. Remove from the heat and add the cheese, lemon juice, mustard, and parsley.

Put the spinach, fish and eggs into an appropriately sized earthenware dish and mix together, pouring over the creamy vegetable sauce. The cooked potatoes should be drained and mashed, add a bit of olive oil, salt, pepper, and a touch of nutmeg, if you like. Spread on top of the fish. Don't bother piping it to make it look pretty, it's a homely hearty thing. Place in the oven for about 25 to 30 minutes until the potatoes are golden. Serve with some nice peas or greens, or baked beans and tomato ketchup

Tony has taught me how to do sardines on toast since being home from hospital, god im getting bloodly sick of them, he will be back later to make me lunch again have to pretend to be asleep, its the only thing he can do bless him Sue

Try this for that something special thats not ----M&S--

Two one and a half inch thick fillet steaks rubbed with crushed black pepper corns

leave in fridge overnight -

served with boiled and crushed new potatoes sauted in stilton and butter-

served with aspargas spears --cook these in a steamer so as not to make to soft-

for the sauce ---

Ingredients:

6 tsp. Fresh cracked black peppercorns

3 Tbsp. dried green peppercorns soaked in 1/4 good red wine

3/4 cup heavy cream--

1 cup red wine

2 Tbsp. butter

large cup of best brandy not the cheap stuff!!!!!

cook meat in a red hot pan coated with just a drop of olive ,

when cooking is completed and meat has been removed put to rest ,

deglaze the pan with 1 cup of the wine plus the brandy

add butter to a sauce pan and let lightly brown, reduce to half over medium heat..

Add cracked black peppercorns, green peppercorns, plus a cup of cream to sauce pan.

Continue cooking while constantly stirring until sauce is reduced by half.

You should now have about a cup peppercorn sauce which can be added to all kinds of food or keep reading--

Next step is most important of all ----

Throw steak down for dog ---------- you drink sauce ----lol

Steve I thought monday was wash day :lol: Loved the steak recipe though but you're a very generous parent, my dogs don't get fillet steak :- " :lol:
