a quick solution for now is to arrange to meet your guests outside your house with the dog, and walk around the block, arriving together, so the 'stranger' isn't 'invading', face on, in a confrontational pose (from your dog's perspective)

It's FREEZING here! The floor is colder and draughtier than anywhere else in the house, and she has less coat than she's acclimatised to. If she's expecting a warm snuggle that doesn't come, she'll probably 'feel' cold too

the first thing I'd do is houseline him. A lightweight lead worn trailing, and work up from that to trailing a proper lead, occasionally picking it up and letting it go with no fuss

If a breeder is producing working dogs, they will presumably only be working a selection from that litter. Docking must be done when the litter are only a few days old, when it is impossible to choose which will be the best to train, so the whole litter will be docked - some of these will then...
She shouldn't be peeing in her sleep, so that is very unlikely to be a training issue. You really need to get her checked out by your vet
I hope you get to the bottom of this quickly. It does sound unpleasant to live with, and it sounds like your dog isn't too happy either
