Have just taken a christmas cake out the oven from a recipe that Janis was kind enough to post on her for me.

Its Fab thanks so much hun :huggles:

Really cheered me up as should have been at Midland counties today showing the Iggy's but have been laid low with flu as has hubby .

I got up at 4am bloody clock changes drive me mad :rant:

Anyway the house smells lovely can't wait to get to eat it now

Aww glad you liked it Lilybet, My gran always used this one...and I love the smell when its cooking too.... :) :cheers: (if you are saving it ....dont forget to douse it with a bit :- " of alchohol each week... :lol: :)

might get round to doing mine soon hopefully. :thumbsup:

Hi Janis can we see this famous recipe please, just about to make ours with my daughter.

I think we ought to have a tpoic with all our finished Christmas cakes on !

ive just made a cople of christmas cakes,and kiplin took a liking to one of them :rant: ,thank god he only managed to get a small bite ,with all the fruit he wouldnt have been too well after :sweating: ;)

this is the one i use,if you love figs and prunes and apricots this is the one :p

I made 2 last week, just put another 2 in the oven, got a few more to make.

Must say though they arn't all for us :b I make them for family and friends, I just love the smell of them cooking in the oven :)
 
These are a few of my finnished ones from last year

5 ozs butter

4 Eggs

7 oz Plain flour

6 oz Dark soft brown sugar

1 tablespoon black treacle

2 oz ground almonds

1 tsp mixed spice & cinnamon

1 lemon grated

1/2 teasp. grated nutmeg

2 1/2 oz chopped almonds

10 oz currants

4 oz raisins

7oz sultanas

2 1/2 oz mixed peel

2 1/2 oz glace cherries

1 tablespoo orange juice

2 tablespoons Brandy

 

Mix all dried fruit...cut cherries wash and dry and add to fruit

mixed peel, almonds, grated orange, & lemon

 

sift flour, salt cinnamon mixed spice

 

cream butter till soft and fluffy, , add eggs one at a time plus a tablespoon of flour each time with every egg.

Then black treacle, orange, brandy and remaining flour then fruit

MIX WELL

 

Spread into a greased and lined tin make hollow in the centre.

 

Two thicknesses of brown paper tied with string around the outside.

 

150 degrees C - 300 degrees C Gas Mark 2 for 3 1/4 hours.

flippen eck....................they look lovely...............mind you i dont like chrimbo cake................................give me a huge chunck of choccie cake with cream anytime

but they do look nice well done :thumbsup:

This time I have also done a taster ,a small baked bean tin washed out dryed and greased and lined with greased proof paper :blink:

Cos its driving me mad smelling them cooking and not eating any :wacko:

Thanks Janis, we'll try that one.....but for us microwave Queens...what does 150'c-300'c mean ? do we start on high, stick the knitting needle in then turn down low ? :b
 
Julie I just keep that temp low right throughout the cooking....if you think its turning too brown on the top too quickly ...you can always turn it down.

But failing that - simple if the top burns you can always slice it off. :D

that temp is degrees centigrade or gas mark 3 or 4
