Hi Kim and welcome
There is no real difference temperament-wise between the differing breedlines. The difference if any comes from human interference! Once a whippet of any kind of breeding has it's chasing/hunting instincts awakened by track training it can never be turned off! So a previously docile and laidback whippet could easily become constantly "on the hunt" that is to say always alert for anything which may be suitable to chase. I will always remember the day after I introduced my showbred whippet to racing - where as she could barely be bothered to leave the house - she became a real escape artist - she was just as loving as always but went ballistic if she thought she was going to race/chase etc
